Here is a wonderful recipe for a spicy and tasty soup with a base of with cabbage, onion, carrot and coconut cream. An easy soup to make with relatively cheap ingredients.

The soup is good as it is, but I would like to have some raw carrot so I add some to the finished soup. And with some crispy chilli on top, the soup is complete.

If you want some protein in the soup instead of keeping it completely vegetarian, I have tried adding some shrimp which I thought turned out well. And a little roasted onion on top is also good if you feel like it.

You can save the leftovers in the fridge for a day and reheat. It will actually be slightly better the next day.

  1. Slice the cabbage, onion and carrot. It is easiest to use a food processor.
  2. In a pot - fry the sliced ​​onion, cabbage and carrot in the oil for a few minutes until everything softens.
  3. Add the coarsely sliced ​​garlic and ginger and fry for a few more minutes.
  4. Add the water and stock cube, bring to the boil and simmer for about 15 minutes.
  5. Add the coconut cream, lime juice, curry paste, salt and cayenne pepper.
  6. Blend everything with a hand blender until you have a smooth soup.
  7. Taste with salt and pepper if necessary.
