Here's a quick and easy dish with big flavors. Serve with boiled rice for a lovely tasty lunch and save the leftovers for lunch boxes for the rest of the week. I also tried this with some cooked pasta (warmed up quickly in a frying pan with the cooked pasta with a little pasta water) and I thought it turned out delicious.

I made this when I was looking for a vegetarian alternative to kung pao chicken, but this turned out to be a completely different dish which was quite tasty on its own.

  1. Heat a frying pan to medium heat and add the oil.
  2. Fry the chopped onion until it softens slightly and then add the chopped bell pepper - fry for a few more minutes.
  3. When the bell pepper has softened slightly, add the chickpeas and mix well.
  4. Then add the grated ginger, crushed garlic, dried chili and five spice - fry for a short while.
  5. Mix the cornstarch in the water and then pour into the frying pan. Also add the soy sauce, hoisin and chopped green onion.
  6. Let it bubble over low heat until the liquid has reduced to a kind of sauce.
  7. Serve with boiled rice.
