It's a bit of a hybrid between the classic oven-baked Falukorv (Falu sausage) and a version featuring a creamy sauce, all cooked in the oven. I found this video from "Rätt Sätt" on YouTube and tried to recreate the recipe based on what was shown (adding a little sweet chili sauce, too). I thought the result turned out pretty well, though I think I’d do things slightly differently if I made it again. For instance, I would have chosen to leave out the cheese at first, cooked everything in the oven for about half an hour, and then added the cheese for the final 10-20 minutes. My oven needed a bit more time to get everything cooking properly, but I couldn't keep it in much longer without the cheese getting overcooked. Of course, another option would be to cover it with aluminum foil so the cheese doesn't burn.
The final result was pretty good, and I served the sausage with rice, a side salad, and tomatoes. Overall, it was an interesting way to cook Falukorv I hadn't tried before. The flavor is quite mild, so you might want to add ingredients like stock, chili, or something similar if you like.

Ingredients
Directions
- Preheat the oven to 225°C.
- Make cuts along the sausage and insert a small slice of cheese into each cut.
- Place the sausage in an ovenproof dish.
- Spread ketchup and mustard over the sausage.
- Clean and slice the leek into small pieces, then scatter them over the sausage.
- Place the remaining cheese on top of the sausage.
- Mix cream, crème fraîche, tomato paste, paprika, sweet chili sauce, and salt in a bowl. Pour the sauce over the sausage.
- Bake at 225°C for 30-50 minutes (depending on the oven—I needed the full 50 minutes). You can cover it with aluminum foil towards the end to prevent the cheese from burning.
- Serve with mashed potatoes or rice and a simple salad.
