Well, there's not much to say about this one. A very simple pizza where the cheese is the focus. A quattro formaggi can be with or without tomato sauce, and here I choose not to use any tomato sauce to give the cheese even more focus.

When I searched around a bit online, it seems that a traditional quattro formaggi contains mozzarella, gorgonzola, fontina and parmigiano reggiano. I couldn't find fontina and used taleggio instead, which seems to be a common substitute.

However, there seems to be quite a lot of variation in where you choose cheeses based on region. Examples of other cheeses that can be used are pecorino, asiago, grana padana, scamorza and provolone, just to name a few.

Since I am giving the recipe for 4 pizzas and I don't have any mechanism on the site to show the recipe for smaller portions (maybe throwing something together over the weekend) so I thought I would make it a little easier by listing the toppings for one pizza:

  • Mozzarella: 60g
  • Gorgonzola: 20g
  • Taleggio: 20g
  • Parmigiano Reggiano: 10g
  • Basil: 1.5g (5 pcs)
  • Olive Oil: 5.25g (1.2 teaspoon)

Pizza Dough
  1. Mix room temperature water with dry yeast - let stand 10 minutes.
  2. Add flour and salt, knead in a machine or by hand until the dough is smooth (5-10 minutes).
  3. Cover the dough and let rise until it has doubled in size (1-2 hours).
  4. Divide the dough into 4 pieces (about 240g/piece), roll into smooth balls and place in lightly oiled containers. Store in the refrigerator overnight.
Pizza
  1. Pick out the dough and expect it to stand at room temperature for 30-60 minutes.
  2. Stretch out the dough using a little extra flour.
  3. Add mozzarella, gorgonzola, taleggio, parmigiano reggiano and fresh basil - bake in the pizza oven.
  4. When the pizza is done, top with olive oil.
