The simplest possible recipe for an interesting pulled pork variation. I usually use pork neck (collar) for pulled pork, but I managed to get hold of some inexpensive cured pork shank (bone-in) and decided to give it a try. At the same time, I wanted to test my homemade plum sauce—which was packed with flavor—thinking it might be enough on its own. Just to be safe, I threw in two homegrown chilies as well, and all in all, I thought it turned out pretty well. It gave the pulled pork a more Asian touch and a slightly different texture compared to using pork neck, but it was tasty and very easy to make.

I've only made this dish once, and only with my homemade plum sauce. I plan to try it with a store-bought version sometime in the future and will try to remember to update this post with the results.

There are surely many ways to do this, but I was aiming for a simple approach here. So, I just took the meat out of the packaging and tossed it—skin, bone, and all—straight into the slow cooker. I added the plum sauce and chopped chili, then let it cook for 8 hours. Afterward, I simply fished out the skin (which was relatively easy to separate by then) and the pieces of bone. Then I shredded the meat, and it was all done.

I tried serving this pulled pork with rice, carrots, some pickled red onion, and salad, which worked out well. I also tried serving it in a homemade ciabatta with the same accompaniments, which worked perfectly too.
