A really tasty and hearty smash burger that tastes like three different varieties of garlic and fried yellow onion. Plenty of calories and a taste that is perfect for garlic lovers.
Here I make simple garlic chips by letting sliced garlic bubble a little in hot oil. When they are ready, you should definitely save the olive oil, which now tastes wonderful of garlic...
I also make the fried onions in a simple way - you can definitely spend more time and caramelize, but frying in a little oil/butter and then adding a pinch of sugar is also good.
I have written a little about my experiences with smashburgers in this article and hope that it can explain the things that I may not go through in detail right here in the recipe. There I write a little about what type of ground beef is good to use and things to think about in general.
I don't have a fancy griddle or the like unfortunately, but you can also do this in a regular durable frying pan. However, the frying pan needs to withstand a little scraping so use carbon steel or stainless steel frying pan (absolutely do not use a frying pan with a non-stick coating). Sure, it's a bit cramped in the pan, but you can do it in batches instead if you think it's easier. Personally, I don't care that much if the burger turns out a little lopsided - that's just part of the charm. It's definitely delicious anyway.

- Slice the garlic into even slices.
- Let the slices bubble for a minute in hot olive oil - remove from heat when the garlic starts to color.
- Let cool and drain on paper.
- Slice the onion into thin slices.
- Fry in oil and butter over low heat until the onion has colored (about 20 minutes).
- Add sugar and season with salt and black pepper.
- Toast the bread in a hot pan (possibly with a little melted butter).
- While the bread is still warm - rub the toasted surface with a split clove of raw garlic.
- Form 3 balls of the minced meat - approx. 80g each.
- Place the balls in a hot frying pan (possibly with a small drizzle of oil) and press out the patties thinly. (more frying pans may be needed or frying in batches)
- Fry until the patties are browned and then scrape them off the pan and turn.
- Place a slice of cheese on each patty and let melt.
- Put the burger together. Bread, burger sauce, pickled cucumber, the fried patties with cheese, the fried onion, more burger sauce, garlic chips and finish with bread.
