A simple everyday favorite at home where everything is cooked on the same sheet/dish in the oven with minimal preparation. Here I use chicken thigh fillets which are not only delicious, it is easy to get juicy without being completely precise with the cooking.

The chicken thighs are quickly marinated with oil, sweet chili sauce and a packet of taco seasoning (or the equivalent amount of homemade variant) while the rest of the dish is prepared and cooked. I choose to first cook the potatoes and onions, which need a little more time, in the oven by themselves on a lightly oiled sheet. After 20 minutes, I add the chicken thighs and make sure that all the marinade is included because it will become a kind of tasty and sweet sauce.

Here I use 180°C with hot air/fan activated and for my oven, 20+20 minutes is perfect to get moderately soft potatoes, lightly roasted onions and chicken thigh fillets that have just reached 72°C internal temperature. This can vary a lot between ovens, so check with a thermometer on the thickest part of the chicken thigh to be safe.

This type of cooking can be varied a lot, so just experiment. However, I think that this particular combination of ingredients was the laziest thing I could think of but which still, in my opinion, gives very good results. Perfect for an evening when you don't feel like doing anything advanced, but still want more real food instead of, for example, ordering something home.

  1. Preheat the oven to 180°C with hot air.
  2. Clean and cut the potatoes into smaller pieces - spread out on a lightly oiled baking sheet.
  3. Peel the onion and cut into larger pieces - spread out on the sheet with the potatoes.
  4. Clean the chicken thighs and marinate them in a bowl together with olive oil, sweet chili sauce and taco seasoning while the potatoes and onions are in the oven.
  5. Cook the potatoes and onions in the oven - approx. 20 minutes.
  6. Remove the sheet and add the marinated chicken.
  7. Bake in the oven for another 20 minutes or until the internal temperature of the chicken thighs has reached at least 72°C at the thickest part.
  8. Remove the sheet from the oven, add the corn kernels and a sliced ​​lime. Garnish with a little chopped parsley and serve immediately.
